Grilled sardines
The dish that tastes most like summer is grilled sardines, the recipe with which the noche de San Juan (summer solstice) is celebrated, next to the bonfires.
Ingredients: sardines and sea salt.
Clean the sardines in water (seawater if possible). Salt abundantly a few hours earlier. It’s better to grill them outdoors, since they give off a strong odour.
Prepare the embers and when ready, place the sardines on the grill, aligned alternating heads and tails.
Wait until they’re done on one side and then turn them over carefully but decisively, to also cook the other side.
Serve hot off the grill, over cornbread or in a tray with "cachelos" (country potatoes cooked with salt and bay leaf).
